What quality setting should I use for WebP?

0.8–0.9 is a good default for photos. Lower values shrink files further; raise quality if you see artifacts.

Is EXIF / GPS metadata removed?

Yes by default. Re-encoding through the canvas pipeline strips EXIF, GPS, and other metadata. You get a clean output file.
